RECIPE: VEGAN CARBONARA SAUCE

I was never a big Carbonara sauce eater, so I didn't really miss it too much once I went vegan. Some days however, especially those days after a long night out dancing, I get cravings for a creamy, savoury pasta dish. Today was one of those days, so I decided to try making a vegan Carbonara sauce and it took me less than 15 minutes to whip this up! It turned out so well (my brother loved it, too), that I just have to share it with you. Ready for some creamy, rich deliciousness?



Ingredients (serves 2):

  • spaghetti
  • 200 ml soy cream
  • 150 gr smoked tofu
  • 1 small onion
  • yeast flakes, salt, pepper, basil and lemon juice to taste
  • (if you have kalanamak salt, use that too - it adds a bit of an egg-y flavour to the sauce)
Directions:
  1. Bring water to a boil in a big pot to cook your pasta in. Meanwhile, chop the tofu into small cubes and dice the onion.
  2. Fry the onion in a bit of water (or oil - whatever you prefer), then add the tofu and fry it for a little while - when it starts browning a little bit, set aside the tofu.
  3. Add the cream to the onions still in the pan, season with salt, pepper, basil (or mixed herbs), yeast flake and lemon juice. Bring everything to a slight boil, then let the sauce simmer and thicken.
  4. When your pasta is almost ready, add the tofu cubes to the sauce and mix everything.
  5. Serve the pasta with lots of sauce, extra pepper and yeast flakes - enjoy!

Whilst I'm hoping to see some snow over the next three weeks that I'll be back home, I decided to post another (and the last) outfit I shot whilst I went interrailing in summer. In Budapest, I came across these perfect hippie pants with huge splits on the sides - they're flowy, light, summery and they were on sale for 7€. As soon as I had the opportunity, I took them out in Croatia and wore them to go for dinner. My friend was kind enough to lend me her crochet top, which I think complements the whole summery look and we found a cute street to take pictures in, old pavement, colourful doors and all.

I've recently started to really tone down outfit wise, often sticking to simple pieces I like, combining them to get a classic and clean look. Pieces like this grey turtleneck sweater I'm wearing in the pictures, which I found at Monki during my stay in Hamburg, are perfect to create such outfits, as it's grey - one of my favourite colours, which is also incredibly versatile, it's super comfortable and warm but not too thick and the turtleneck adds a little something to it without overloading it. As in previous years, I've been loving grey/camel/black/white combinations, so this outfits hits the nail on the head. It was perfect for a day out in London, strolling through pretty streets and big stores - comfortable, adequately warm and fuss-free.

If you follow me on Instagram (or Snapchat), you've probably seen that I spent last weekend in Hamburg. It rained almost the entire day during my stay there but I luckily managed to get some outfits pictures snapped on Saturday before it started raining cats and dogs. Being away for the weekend, I had an opportunity to wear clothes for more than just two or three days a week (the other four days of the week you'll find me in pyjamas, jogging pants or gym clothes) and finally got to take pictures of this beautiful tan turtleneck sweater I picked up at Topshop a few weeks ago. Other than the obvious reasons for my love towards this piece (aka the colour and turtleneck), I love how it can be worn over jeans as well as a dress with a tight skirt underneath. It's one of those statement pieces that still falls in the "basics" category of my wardrobe that can just be thrown on with a pair of black jeans or tights and makes me feel fully dressed in a nice outfit but it's such a classic piece in itself that I can see myself wearing it for a long time.

Going Interrailing can be an amazing but potentially quite expensive experience accommodation wise. Luckily, with hostels pretty much everywhere nowadays and Airbnb slowly taking over the holiday accommodation business, it's becoming increasingly easier to find great places to stay at on a budget. One of my favourite part about organising the whole trip with my friends was looking for cute places to stay at in the different cities we visited. Since we travelled in a group of five, accommodation costs were already lower as they tend to be cheaper the more people you are. Since we loved all the accommodations we stayed in during our city trips (so I won't be addressing the place we stayed in in Croatia, even though we liked that one too), I thought I'd share the different flats and the hostel we stayed in!

No, I have not dropped off the face of earth, I've just found myself sick, busy with Uni work and generally procrastinating blogging, simply because I'm lacking inspiration and still learning to float instead of drown in that thing called third year...
Over the past two weeks, I've been watching a lot of documentaries (re-watched two, actually) and I thought that I'd share the ones I've watched and enjoyed with you. With the temperatures dropping, inviting us to stay inside and have tea on the couch whilst watching something in the evenings, I've increasingly been watching all sorts of things, including tv shows (duh) and movies, but documentaries in particular have been a favourite of mine. I love the feeling of learning something while watching a documentary on an interesting topic and I love sharing documentary tips about themes I'm passionate about with other people even more. Funnily enough, I realised that the four documentaries I want to share with you can be divided in two categories only: nutrition/food choice and fashion. Just after I posted the last outfit a few days ago, writing about how the pictures were taken at a time when it was still possible to wear sandals, the temperatures have dropped a hell of a lot and all I've been doing the past few days is drink litres of tea and wear layers and layers of clothes. Just before the temperature drop happened, I wore the outfit shown above, telling myself that I should think out of the box more and wear other pants than only my skinny jeans, even when the weather is not open shoe or ballet flat friendly anymore. I love my striped pants but I always picture me wearing them with ballet flats, giving them more of a summery look, rather than opting for different pieces of clothing shoes. When I came up with this combination of turtleneck, striped flared pants and my new second hand sneakers, I realised that the pants work just as well in a more sporty, laid back look than they do in a simple, more classic look that features red lipstick and cute ballet flats. I might even be able to wear them with black tights underneath if the temperatures really are not going up again before Spring!?

PS: Yes, I have a thing for shoe close-ups next to those yellow stripes on the street.

Even before I left to Berlin, I already knew that our Interrail would anything but a shopping trip for me. My humongous was packed to the brim and I'm still unsure about how many kilos of clothes and shoes and food I carried on my back over those four weeks. Given the space (and weight) limitations, I knew that going shopping in the different cities we stayed at wouldn't be an option. Nevertheless, I picked up a thing or two whilst we were still in Berlin, because "they're so light and small, it won't make a difference to add them to my backpack". One of the few things I got was this black, extra long blouse/shirt from Primark. I've been loving all things long, oversized and shirt-like, so this shirt ticked all the boxes. I love the layering of different lengths and materials in this outfit and my friend and I found the perfect, simplistic background to take pictures in front of. I added my lace up (or as I like to call them when worn like this: lace down) sandals from Mango to get a change from wearing sneakers every single day and voilà, a simple, comfortable and apparently very "blogger" (quote by Sarah) outfit.

Back in July already, I had gotten these culottes (my dad liked them enough on me to buy them for me ha) but the weather was literally too hot ninety percent of the time, which meant that they stayed at the back of my closet for months. Yesterday, I finally got the chance to take them out of the closet and take pictures of them when my friend and I went for a stroll through Brighton and a short study & coffee session. Funnily, I only got this sweater last week but immediately planned to wear it with my culottes as soon as I saw the two pieces next to eachother. There's just something about the colour combination of white and camel that I love so much! To me, camel screams Autumn, while the white still keeps the look light and more summery rather than turning into a darker, wintery look. All things fashun aside - culottes are simply the most damn comfortable things ever - I might have to invest into another, less sensitive (aka darker) pair of culottes, for those days on which I simply can not stand squeezing myself into skinny jeans or tights. October Inspiration & Thoughts

While September wasn't as much of a slow start into my third year of Uni as I expected, October marks the month of being busy and hopefully as productive as possible. I'm really feeling like I need to change gears and just go all in regarding Uni but even personal development and hopefully figure out my future plans for the time after I graduate next Summer (next Summer already! How why what?). It's also the time to get back into a good gym routine, which already seems to happening right now as I seem to be crazy enough to book five different gym classes a week. Someone want to come scrape me off the floor?
Style wise, I'm looking forward to the temperatures going down - but as I said, that is stylewise because I have been surprisingly enjoying the warm temperatures we've had for so long this year and am a tad bit sad about Summer being over whilst contemplating moving to California in a year or so. The last two weeks have blessed us with almost entirely amazing weather with lots and lots of sunshine but that also meant that the big sweaters had to stay in the closet if I didn't want to melt in them under the warm Autumn sun. I'm excited to share a few more Autumn inspired outfits with you, one of which I already shot today.
I'm planning to spread out Interrail posts (including Vegan Eats posts) over the next couple of weeks, so you'll see the one or other travelling post popping up here or there but I also want to get back to "regular" blogging, sharing my everyday life, outfits and inspirations with you.
Dang, October really does look like a busy month so far. What about you?

After a very productive and Uni work filled Saturday, my two housemates and I decided that we still wanted to go to London during our very first week back in the UK, even after our initial plans didn't work out due to too many classes and other Uni related events. All of us agreed that we should make the most of our last year in Brighton and pay more visits to London, because really, when will we ever be living this close to London again in our lives?
A few days before that, I went on a mini shopping trip in Brighton because I felt the desperate need of buying something that screams Autumn - definitely one of my favourite seasons along with Spring - and I (amongst other things) stumbled across this gorgeous poncho. A poncho's been on my wishlist for almost a year now but I somehow never bought one, often because the Topshop prices scared me away from doing so. It only added to my excitement when I found out that this New Look poncho was only £18 (plus a minor student discount) and the perfect colour to add to my Autumn wardrobe. I'm always a sucker for a good colour combination, so I naturally put together a very Autumnal look, combining all of the most beautiful colours at once: bordeaux, khaki and tan. With the good weather we've been having over here the past few days (*knocks on wood*), a poncho has been the perfect piece to throw on when it's a bit more chilly outside whilst it can still easily be carried on your arm or stuffed inside your bag, as its size is closer to a big scarf than a coat. Let's see how long it'll take me before I go back into New Look and get it in another colour...

After having been to Berlin twice before this summer, I already knew of the endless choices of good places offering good food. Even though I wasn't vegan (yet) during both visits, I quickly realised that Berlin is probably one of the most vegan friendly and exciting cities when it comes to variety and taste of vegan options. As I have a total of four Vegan Eats to share with you from Berlin alone, I decided to pack two different cafés/restaurants into one post in order to avoid turning this blog into one big restaurant review (ha! As if it wasn't heading that way already).

Back to reality

After having been on the road for almost four weeks, hopping from one country to the other, my friends and I finally embarked on our last long journey home on Thursday afternoon. A journey we were already prepared to be very long was stretched even more due to Germany closing its borders because of the massive flows of refugees arriving in Europe and trying to enter Germany, which ended up in us changing from trains to buses and back to trains for hours on end, adding up to a journey of a total of 26 hours. Yesterday, I mainly did errands, unpacked and re-packed and avoided any other responsibilities connected to University. I'm flying back to the UK today, my first day of class is tomorrow and I'm already knee deep in preparatory work for next week's classes. I can already feel the load of work coming towards me that third year of University brings with it and I'm both looking forward to getting back into a routine and terrified of being almost done with my undergraduate degree at the same time.

Blogging wise, I took tons of pictures during my trip, a few of which will go towards outfits posts, quite a few Vegan Eats posts which I'll probably be combining in separate posts to avoid spamming the blog with only this category of posts and lots of photo diaries. Unfortunately, I found out that quite a lot of pictures I took were taken in a different setting than I usually use yesterday, which I didn't notice until I actually got to look at the photos on a laptop screen, so the quality varies.. Either I'll fix it a bit or we'll just have a bit of variety photo wise over the next few weeks when I'll be publishing photos and texts about my trip!

I enjoy collecting bloopers of outfit shots so much not only because they always end up making a great, silly and funny alternative to the typical outfit posts but because they remind us that we're all human beings with weird quirks.
